A Pake is a combination of pie and cake. I developed this receipt (as the late Jennifer Paterson was wont to call a recipe) from the Pake recipe of Judy, the wife of Joe Getty of Armstrong and Getty Radio fame, making a few changes.
Blueberry Pake
Prepare your favorite pie crust receipt or buy a good brand of frozen pie crust, such as Marie Callender's. Place the pie crust into a nine inch deep dish pie pan (or just use the pan holding your frozen crust).
3 cups blueberries, rinsed and dried--squishy berries removed
1/2 cup sugar
1/2 tsp. cinnamon (I love the heat of cinnamon with blueberries)
Place the sweetened, spiced blueberries in the pie crust.
In a separate bowl, mix the following:
1 cup sour cream (drain the extra liquid, if any, so the pake won't be overly moist)
1 cup sugar
1 cup whole wheat pastry flour
2 eggs (beat slightly before adding to mix)
When well mixed, ladle over the blueberries in the pie crust. Smooth the top of the pake with your spatula or wooden spoon. Place the pie pan on a sturdy cookie sheet or pizza pan to catch the inevitable drips. Bake the pake for 50-60 minutes in an oven, which has been heated to 350 degrees Fahrenheit. The pake will be golden brown on top when done.
