Cynthia's Savory Breakfast Casserole

Most mornings find us enjoying a bagel with fruit, oatmeal topped with blueberries, or an omelet. These foods start our days right with solid nutrition. Some mornings, though, we want something "scrumptier" than usual: enter the breakfast casserole. I can whip up a breakfast casserole in just a few minutes and spend the cooking time either readying myself for the day or reading. I make two versions, the savory version with meat and cheese and a sweet version, which I will post later, featuring fruit.

Cynthia's Savory Breakfast Casserole (moderate carbohydrate)

1 pound ground sausage, graveled, browned, and drained
2 cups grated cheddar-jack cheese (you can use all cheddar or all jack, but I prefer the combination)
12 ounces evaporated milk
4 large eggs
3 tablespoons flour
1 clove garlic, pressed or minced
1 1/2 teaspoons Italian seasoning
1/2 teaspoon salt

1. Use cooking spray, oil, or butter to grease a 13x9 baking pan.
2. Preheat oven to 350 degrees Fahrenheit.
3. Gravel, brown, and drain sausage.
4. Grate cheese.
5. Place browned sausage and grated cheese into the greased baking pan.
6. In a bowl, beat together evaporated milk, eggs, flour, and seasonings.
7. Pour the milk and egg mixture over the meat and cheese in the baking pan.
8. Stir the mixture in the baking pan until the meat and cheese are covered.
9. Place into the preheated oven and bake for 45 minutes or until golden brown on top.
